Meringue Recipes - Angelica-Topped Moments Recipe

Ingredients

  • 1 large egg white

  • 1/8 tsp salt

  • 1 cup/200 g granulated sugar

  • 1/3 cup/30 g finely chopped crystallized ginger

  • 1/3 cup/30 g finely chopped candied cherries

  • 1/3 cup/30 g finely chopped seedless raisins

  • 2/3 cup/70 g finely chopped almonds

  • 1/3 cup/30 g finely chopped angelica


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Line a cookie sheet with parchment paper.

  2. Beat the egg white and salt in a medium bowl with an electric mixer at medium speed until frothy.

  3. With mixer at high speed, gradually add the sugar, beating until stiff, glossy peaks form.

  4. Fold in the ginger, candied cherries, raisins, and almonds. Drop teaspoons of the batter 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake for 10 minutes. Remove from the oven and top with angelica.

  6. Bake for 10-15 minutes more, or until firm to the touch. Transfer to racks to cool.
