Fritter Cookie Recipes - Sliced Apple Fritters Recipe

Ingredients

  • 2 eggs, separated

  • 3/4 cup/125 g all purpose/plain flour

  • 1/2 cup/125 ml dry white wine

  • 2 tbsp extra-virgin olive oil

  • 1/8 tsp salt

  • 6 tart apples, peeled and cored

  • juice of 1 lemon

  • 2 cups/500 ml olive oil, for frying

  • 1/3 cup/50 g confectioners'/icing sugar, to dust


Method:

  1. Beat the egg yolks in a large bowl with an electric mixer at high speed until pale.

  2. With mixer at medium speed, beat in the flour, wine, extra-virgin oil, and salt. Cover with a clean cloth and let stand for 1 hour.

  3. Slice the apples and slice crosswise. Drizzle with the lemon juice to prevent them from turning brown.

  4. With mixer at high speed, beat the egg whites in a large bowl until stiff peaks form.

  5. Use a large rubber spatula to fold them into the batter. Dip the apple slices in the batter, turning to coat well.

  6. Heat the oil in a deep fryer or frying pan until very hot. Fry the apple slices in batches for 5-7 minutes, or until lightly browned all over.

  7. Drain well on paper towels. Dust with the confectioners' sugar and serve hot.
