Fritter Cookie Recipes - Pumpkin Fritters Recipe

Ingredients

  • 2 lb/1 kg pumpkin

  • 1 cup/180 g seedless white raisins/sultanas, soaked

  • 1/4 cup/50 g sugar

  • 2/3 cup/100 g all purpose/plain flour

  • 1 tbsp baking powder

  • grated zest of 1 lemon

  • 1/8 tsp salt

  • 1 cup/250 ml sunflower oil, for frying

  • sugar, to sprinkle


Method:

  1. Peel the pumpkin and remove the seeds and fibrous matter. Slice the flesh and place in a saucepan with sufficient cold water to cover.

  2. Cook until the flesh is just tender (not too long, about 20 minutes). Drain well and press in a cloth to absorb any excess moisture.

  3. Place in a bowl, add the drained raisins, the sugar, the flour and baking powder sifted together, the lemon zest, and salt.

  4. Mix thoroughly with a spoon and then shape into little balls about the size of a walnut.

  5. Fry in  batches in plenty of very hot oil, removing with a slotted spoon when golden brown all over.

  6. Drain on paper towels. Sprinkle with sugar and serve hot.
