Fritter Cookie Recipes - Orange Rice Fritters Recipe
Ingredients

2 cups/500
ml milk
-
1 1/4 cups/310
ml
water

1 cup/200 g
short grain rice
-
1/8 tsp salt
-
3 egg yolks
-
3/4 cup/150
g sugar
-
3/4 cup/125 g
all purpose/plain flour

6 oz/180 g oranges,
cut into small
pieces
-
1 tsp
vanilla
extract/essence

1 tbsp
orange liqueur
-
2 cups/500
ml olive oil, for frying
Method:

Mix the milk and
water in a large saucepan. Add the rice and salt. Bring to a boil over medium heat and simmer until
all the liquid has been absorbed, about 40 minutes.

Remove from heat and stir in the egg yolks, 1/2
cup (100 g) of sugar, the flour, orange, vanilla,
and orange liqueur until well blended. Let stand
for 30 minutes.

Heat the oil in a deep fryer or
frying pan until very hot. Drop scant tablespoons
of the batter into the oil and fry in batches for
5-7 minutes, or until crisp and golden brown all
over.

Drain well on paper towels. Dust with the
remaining sugar and serve.
