Fritter Cookie Recipes - Lemon and Egg Fritters Recipe
Ingredients

1 cup/250 ml water
-
1/8 tsp salt
-
1/2
cup/125 g butter
-
1/4 cup/50 g superfine/caster
sugar
-
grated zest of 1 lemon
-
1 2/3 cups/250 g all purpose/plain flour

8
eggs
-
1-2 cups/250-500 ml olive oil for frying

confectioners'/icing sugar, to dust
Method:

Place the water,
salt, butter, sugar, and lemon zest in a
heavy-bottomed saucepan and bring to a boil.

When
the water is boiling, add the flour and stir with a
wooden spoon.

Continue cooking, stirring
continuously, until the dough is thick and comes
away from the sides of the saucepan.

Remove from the
heat and set aside to cool. When cool, stir in the
eggs one at a time. The dough should be soft, but
not runny. Set aside to rest for at least 1 hour.

Heat the oil in a
deep sided frying pan until
very hot, but not smoking. Use a teaspoon to
scoop up the dough and drop it into the hot oil.

Fry
the fritters, a few at a time, until they are plump
and golden brown. Remove the fritters from the oil
with a slotted spoon and drain on paper towels.

Keep
warm. Repeat until all the dough has been used up.
Sprinkle with confectioners' sugar and serve hot.
