Fritter Cookie Recipes - Italian Christmas Fritters Recipe
Ingredients

cups/525
all purpose/plain
flour

eggs
-
2 tbsp
superfine/caster sugar

1/2 cup/125 ml anisette

1/8 tsp salt

cups/500 ml oil, for frying

3/4 cup/180 ml honey
-
1 cup/100 g diced candied orange peel
-
1 cup/100 g diced candied lemon peel
-
4 tbsp colored sprinkles
Method:
-
Six the flour
with the eggs, sugar, liqueur, and salt in a large
bowl and beat until smooth. Set aside to rest for 2
hours.

Scoop out tablespoonfuls of the dough and
roll them into sticks about the thickness of a
pencil. Cut into pieces about 1/2 inch (1-cm) long.

Heat the oil to very hot in a large frying pan and
fry in small batches until light golden brown.

Scoop
the fritters out of the oil with a slotted spoon and
drain on paper towels.

Heat the honey in a large,
heavy-bottomed saucepan until thoroughly melted.

Add
the cookies and the candied orange and lemon peels.
Stir carefully until they are all coated with honey.

Place the cookies on a serving dish and decorate
with the sprinkles. Serve.
