Fritter Cookie Recipes - Italian Christmas Fritters Recipe

Ingredients

  • 3 1/2 cups/525 all purpose/plain flour

  • 4 eggs

  • 2 tbsp superfine/caster sugar

  • 1/2 cup/125 ml anisette

  • 1/8 tsp salt

  • 2 cups/500 ml oil, for frying

  • 3/4 cup/180 ml honey

  • 1 cup/100 g diced candied orange peel

  • 1 cup/100 g diced candied lemon peel

  • 4 tbsp colored sprinkles


Method:

  1. Six the flour with the eggs, sugar, liqueur, and salt in a large bowl and beat until smooth. Set aside to rest for 2 hours.

  2. Scoop out tablespoonfuls of the dough and roll them into sticks about the thickness of a pencil. Cut into pieces about 1/2 inch (1-cm) long.

  3. Heat the oil to very hot in a large frying pan and fry in small batches until light golden brown.

  4. Scoop the fritters out of the oil with a slotted spoon and drain on paper towels.

  5. Heat the honey in a large, heavy-bottomed saucepan until thoroughly melted.

  6. Add the cookies and the candied orange and lemon peels. Stir carefully until they are all coated with honey.

  7. Place the cookies on a serving dish and decorate with the sprinkles. Serve.
