Fritter Cookie Recipes - Good Friday Fritters Recipe

Ingredients

  • 1 3/4 cups/430 ml milk

  • 1/2 cup/100 g sugar

  • 1 tsp anise + extra to dust

  • 1 1/2 cups/225 g all purpose/plain flour

  • grated zest of 1 lemon

  • 1/2 tsp ground cinnamon

  • 1/2 tsp vanilla extract/essence

  • 4 large eggs

  • 4 apples, peeled, cored, and finely chopped

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Bring the milk, 3 tablespoons of sugar, and anise to a boil in a medium saucepan.

  2. Sift the flour into a large bowl. Stir in the lemon zest, cinnamon, and vanilla and make a well in the center.

  3. Pour in the boiling milk mixture and stir until smooth. Add the eggs, one at a time, until just blended after each addition. Add the apples.

  4. Heat the oil in a large frying pan to very hot. Scoop out tablespoonfuls of the batter and fry in batches for 5-7 minutes, or until golden brown all over.

  5. Drain well on paper towels. Dust with the sugar and anise.
