Fritter Cookie Recipes - Fruit and Nut Fritters Recipe

Ingredients

  • 1 2/3 cups/250 g all purpose/plain flour

  • 3/4 cup/180 ml milk

  • 1/3 cup/70 g sugar

  • 3 tbsp butter, melted

  • 3 egg yolks

  • 1 tsp baking powder

  • 1 tbsp Marsala wine

  • 1 tsp ground cinnamon

  • 1/8 tsp salt

  • 10 oz/300 g dried fruit and nuts, such as prunes, pineapple, papaya, pear, apricots, peanuts, hazelnuts, pecans, walnuts, or figs

  • 2 cups/500 ml olive oil, for frying

  • 1/3 cup/50 g confectioners'/icing sugar, to dust


Method:

  1. Beat the flour, milk, sugar, butter, egg yolks, baking powder, Marsala, cinnamon, and salt in a large bowl with an electric mixer at medium speed until smooth.

  2. Cover with a clean cloth and let stand in a warm place for 1 hour.

  3. Chop the dried fruit and nuts in a food processor or until very finely chopped.

  4. Shape the fruit and nut mixture into balls the size of walnuts. Dip the balls into the batter, turning to coat well.

  5. Heat the oil in a deep fryer or frying pan until very hot. Fry the gnocchi in batches for 5-7 minutes, or until crisp and golden brown all over.

  6. Drain well on paper towels. Dust with the confectioners' sugar and serve hot.
