Fritter Cookie Recipes - Fried Egg Cream Recipe

Ingredients

  • 5 eggs, separated

  • 3/4 cup/150 g sugar

  • 1 1/3 cups/200 g all purpose/plain flour

  • 1 quartf11iter milk, warmed

  • grated zest of 1 lemon

  • 1 3/4 cups/100 g fresh bread crumbs

  • 1 cup/250 ml sunflower oil, for frying


Method:

  1. Place the egg yolks and sugar in a fairly small or double boiler and beat well until they are pale and frothy.

  2. Sift in the flour a little at a time and mix well. Keep stirring as you add the tepid milk and the lemon zest (without any of the white pith).

  3. Place the saucepan over a very low heat and cook the custard while stirring slowly and continuously with a wooden spoon until it becomes very thick.

  4. Turn the custard out onto a lightly oiled marble slab or into a shallow container and leave to cool.

  5. Cut the custard diagonally to produce diamond shapes. Lightly whisk the egg whites. Dip the custard into the egg whites and coat with bread crumbs.

  6. Fry in batches in plenty of very hot oil until they are a good golden brown.
