Fritter Cookie Recipes - Currant Fritters Recipe

Ingredients

  • 1 1/2 cups/225 g all purpose/flour flour

  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 4 tbsp vegetable shortening

  • 1/3 cup/70 g granulated sugar

  • 1/2 cup/90 g dried currants

  • 2 tbsp water + more as needed

  • 1 cup/250 ml peanut oil, for frying


Method:

  1. Sift the flour, baking powder, and salt into a large bowl. Use a pastry blender to cut in the shortening until the mixture resembles fine crumbs.

  2. Stir in the 1/4 cup (50 g) sugar and the currants. Mix in 2 tablespoons water to form a smooth dough, adding more water as needed.

  3. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Roll out the dough on a lightly floured surface to a thickness of 1/2 inch (1 cm). Use a 2-inch (5-cm) cookie cutter to cut out the cookies.

  5. Heat the oil in a large deep frying pan until very hot (365°F/185°C). Fry the cookies in small batches for 5-7 minutes, or until golden brown.

  6. Drain well on paper towels. Sprinkle with the remaining sugar and serve hot.
