Fritter Cookie Recipes - Brandy-Flavored Fritters Recipe

Ingredients

  • 3 1/3 cups/500 g all purpose/plain flour

  • 2 tbsp superfine/caster sugar

  • 1/8 tsp salt

  • 2 tbsp butter, cut into small pieces

  • 4 eggs

  • 3 tbsp Cognac (or other grape brandy) or white wine or finely grated lemon zest

  • 1 cup/250 ml oil, for frying

  • confectioners'/icing sugar, to dust


Method:

  1. Sift the flour into a bowl and mix well with the sugar and salt. Turn out onto a pastry board and shape into a mound.

  2. Make a well in the center and add the butter, eggs, and brandy (or white wine or lemon zest).

  3. Combine all the ingredients, gradually working in the flour to form a smooth, well-blended dough.

  4. Cover with a clean cloth and leave to rest in a warm place for 2 hours. Roll out the dough to make a very thin sheet about 1/8 inch (3 mm).

  5. Use a fluted pastry wheel to cut the pastry into strips 1 1/4 inch (3 cm) wide and 8 inch (20 cm) long.

  6. Tie each strip loosely into a knot and deep fry a few at a time in very hot oil until pale golden brown.

  7. Drain on paper towels. Dust with the confectioners' sugar before serving.
