Fritter Cookie Recipes - Battered Fresh Fruit Recipe

Ingredients

  • 3 eggs

  • 4 tbsp all-purpose/plain flour

  • 1 quart/1 liter milk

  • 1 small pineapple

  • 2 firm-ripe bananas

  • 2 tart apples, cut into wedges

  • 1/2 tsp baking powder

  • 1 tsp vanilla extract/essence

  • 2 cups/500 ml olive oil, for frying

  • 1/3 cup/50 g confectioners'/icing sugar, to dust


Method:

  1. Beat the eggs in a large bowl with an electric mixer at high speed until pale.

  2. With mixer at medium speed, beat in 2 tablespoons of flour and the milk. Cover with a clean cloth and let stand in a warm place for 1 hour.

  3. Peel the pineapple and cut the flesh into 1/2-inch (1-cm) thick slices. Cut each slice in 4.

  4. Peel the bananas and cut in 4. Stir the baking powder and vanilla into the batter.

  5. Dip the pineapple, bananas, and apples in the batter, turning to coat well.

  6. Heat the oil in a deep fryer or frying pan until very hot. Fry the fruit in batches for 5-7 minutes, or until crisp golden brown all over.

  7. Drain well on paper towels. Dust with the confectioners' sugar and serve hot.
