g apples, peeled, cored, and cut into small
sticks

ml olive
oil, for frying

confectioners'/icing sugar
Method:
Sift the flour,
baking powder, and salt into a large bowl. Beat in
the sugar, lemon zest, orange juice, rum, and eggs.
Add the milk gradually and stir until smooth. Stir
in the raisins and apples.
Heat the oil in a deep
fryer or frying pan until very hot. Drop scant
tablespoons of the batter into the oil and fry in
batches for 5-7 minutes, or until crisp and
golden brown all over.
Drain well on paper towels.
Dust with the confectioners' sugar and serve hot.
