Fresh Fruits Recipes - Tropical Baskets Recipe
Ingredients

1/2 cup/125 g butter
-
8 tbsp
com/golden syrup

1/4
cup/50 g sugar
-
1/2 tsp cream
of
tartar
-
3/4 cup/125
g all purpose/plain
flour
-
2 tsp ground ginger
-
fresh fruit
salad, made with
fruits of the season, sliced and marinated with
lemon juice and sugar
Method:

Preheat the oven
to 350°F/180°C/gas 4. Butter a large baking sheet.

Heat the butter, corn syrup, and sugar over low heat
in a small saucepan until melted.

Remove from heat
and stir in the cream of tartar, flour, and ginger.
Drop tablespoons of the mixture onto the prepared
baking sheet.

Shape into 2-inch
(5-cm) rounds, 2
spacing well apart. Bake for 8-10 minutes, or
until golden brown. Cool the cookies on the sheet
for 5 minutes, or until pliable.

Use a thin metal
spatula to remove them from the sheet. Shape into
small baskets, fluting the edges with your
fingertips.

Let cool completely, then fill with
fresh fruit salad just before serving.
