Fresh Fruits Recipes - Tangy Pineapple Cookies Recipe

Ingredients

  • 2 1/4 cups/330 g all purpose/plain flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 cup/250 g butter, softened

  • 2/3 cup/140 g granulated sugar

  • 1 large egg

  • 1 tbsp fresh or canned pineapple juice


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Set out two cookie sheets. Sift the flour, baking powder, and salt into a medium bowl.

  2. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg, beating until just blended. Mix in the dry ingredients, followed by the pineapple juice.

  4. Insert a star-shaped design plate into a cookie press by sliding it into the head and locking it in place.

  5. Press out the cookies, spacing about 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake for 8-10 minutes, or until just golden at the edges. Cool on the sheets until the cookies firm slightly. Transfer to racks and let cool completely.
