Ingredients

  • 2 cups/300 g all purpose/plain flour

  • 1 tsp ground ginger

  • 1/8 tsp salt

  • 1 cup/250 g butter, softened

  • 2/3 cup/140 g firmly packed soft brown sugar

  • 1 large egg, lightly beaten

  • 1 cup/150 g chopped crystallized pineapple

  • 1/2 cup/50 g finely chopped crystallized ginger


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 13 x 9-inch (33 x 23-cm) baking pan.

  2. Sift the flour, ground ginger, and salt into a medium bowl. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Use a wooden spoon to mix in the dry ingredients until the mixture resembles coarse crumbs. Transfer half the mixture to a small bowl and set aside.

  4. Add the egg to the remaining mixture and mix to form a smooth dough. Firmly press the dough into the prepared pan to form a smooth, even layer.

  5. Sprinkle the crystallized pineapple and ginger on top. Sprinkle with the reserved crumb mixture.

  6. Bake for 45-50 minutes, or until golden. Cool in the pan for 15 minutes and cut into bars. Serve warm.
