Preheat the oven
to 375°F/190°C/gas 5. Line two cookie sheets with
parchment paper. Sift the flour and salt into a
medium bowl.
Beat the eggs, superfine sugar, and
orange zest in a large bowl with an electric mixer
at high speed until pale and very thick.
Use a
large rubber spatula to gradually fold in the
dry ingredients. Fit a pastry bag with a 1/2-inch
(l-cm) star tip.
Fill the pastry bag, twist the
opening tightly closed, and squeeze out 2-inch
(5-cm) lines, spacing them 3 inches (8 cm) apart on
the prepared cookie sheets.
Bake, one sheet at a
time, for 5-10 minutes, or until just golden. Transfer to racks to cool.
