Ingredients

  • 3/4 cup/125 g all purpose/plain flour

  • 1/8 tsp salt

  • 1 1/3 cups/200 g finely ground almonds

  • 1 cup/200 g granulated sugar

  • 1 tbsp finely grated orange zest

  • 1/2 cup/125 g butter, cut up

  • 2 large egg whites, lightly beaten


Method:

  1. Sift the flour and salt into a large bowl. Stir in the ground almonds, sugar, and orange zest.

  2. Use a pastry blender to cut in the butter until the mixture resembles fine crumbs. Mix in the egg whites to form a stiff dough.

  3. Divide the dough in half. Form the dough into two disks, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Preheat the oven to 350°F/180°C/gas 4. Butter three cookie sheets.

  5. Pinch off balls of dough the size of walnuts and shape into rounded S-shape cookies.

  6. Use a spatula to transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart.

  7. Bake, one sheet at a time, for 12-15 minutes, or until golden brown. Transfer to racks to cool.
