Fresh Fruits Recipes - Lemon Stars Recipe

Ingredients

  • 1 2/3 cups/250 g all purpose/plain flour

  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 1/2 cup/100 g granulated sugar

  • 1 large egg

  • 6 tbsp sunflower oil

  • 4 tbsp  light single cream

  • 1 tsp honey

  • Grated zest of 1 lemon

  • 1 tbsp lemon curd

  • 1 tbsp candied lemon zest


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, and salt into a large bowl.

  2. Stir in the sugar. Add the egg, beating until just blended. Stir in the oil, cream, honey, and lemon zest.

  3. Fit a pastry bag with a l/cinch (1-cm) star tip. Fill the pastry bag, twist the opening tightly closed.

  4. Squeeze out generous 1 1/2-inch (4-cm) stars, spacing 1 inch (2.5 cm) apart onto the prepared cookie sheets.

  5. Bake for 10-15 minutes, or until just golden at the edges. Transfer to racks to cool.

  6. Dot the tops of the cookies with lemon curd and decorate with the candied lemon zest.
