Ingredients

cups/250 g all
purpose/plain flour

baking powder

1/2 cup/100 g granulated
sugar

1 large egg

6 tbsp
sunflower oil

4 tbsp
light single cream
-
1 tsp honey

Grated zest of 1 lemon

tbsp lemon curd

1 tbsp candied
lemon
zest
Method:

Preheat the oven
to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, and salt into a large
bowl.

Stir in the sugar. Add the egg, beating
until just blended. Stir in the oil, cream, honey,
and lemon zest.

Fit a pastry bag
with a l/cinch (1-cm) star tip. Fill the pastry bag, twist the
opening tightly closed.

Squeeze out generous
1 1/2-inch (4-cm) stars, spacing 1 inch (2.5 cm) apart
onto the prepared cookie sheets.

Bake for 10-15
minutes, or until just golden at the edges. Transfer to racks to cool.

Dot the tops of the
cookies with lemon curd and decorate with the
candied lemon zest.
