Fresh Fruits Recipes - Lemon Carrot Cookies Recipe

Ingredients

  • 1/2 cup/75 g all purpose/plain flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1/4 cup/50 g granulated sugar

  • 2 tbsp finely grated lemon zest

  • 2 tbsp margarine or butter, softened

  • 1 2/3 cups/200 g very finely shredded carrots or grated carrots

  • 1 tbsp cold water (optional)


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a cookie sheet.

  2. Sift the flour, baking powder, and salt into a medium bowl. Reserve 2 teaspoons of the sugar.

  3. Beat the margarine and remaining sugar with the lemon zest in a medium bowl with an electric mixer at high speed until creamy.

  4. Use a wooden spoon to mix in the shredded carrot, followed by the dry ingredients to make a soft dough. If the dough is stiff, add the water.

  5. Drop tablespoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheet. Sprinkle the tops of the cookies with the reserved sugar.

  6. Bake for 15-20 minutes, or until golden and firm to the touch.
