Fresh Fruits Recipes - Lemon Carrot Cookies Recipe
Ingredients

1/2 cup/75
g all
purpose/plain flour

1 tsp
baking powder
-
1/8 tsp
salt
-
1/4 cup/50 g
granulated
sugar

2 tbsp finely grated
lemon
zest
-
2 tbsp
margarine or
butter, softened

1 2/3
cups/200 g very finely shredded
carrots or grated carrots

1 tbsp cold
water (optional)
Method:

Preheat the oven
to 350°F/180°C/gas 4. Butter a cookie sheet.

Sift the flour, baking powder, and salt into a
medium bowl. Reserve 2 teaspoons of the sugar.

Beat the margarine and remaining sugar with the
lemon zest in a medium bowl with an electric mixer
at high speed until creamy.

Use a wooden spoon to
mix in the shredded carrot, followed by the dry
ingredients to make a soft dough. If the dough is
stiff, add the water.

Drop tablespoons of the
dough 2 inches (5 cm) apart onto the prepared cookie
sheet. Sprinkle the tops of the cookies with the
reserved sugar.

Bake for 15-20 minutes, or until
golden and firm to the touch.
