Fresh Fruits Recipes - Lady Lemon Cookies Recipe

Ingredients

  • 3 1/3 cups/500 g all purpose/plain flour

  • 3/4 cup/150 g granulated sugar

  • 2 large eggs

  • 1/2 cup/125 ml milk

  • 1 tsp vanilla extract/essence

  • 6 tbsp butter, softened

  • Grated zest of 1 lemon

  • 1/8 tsp salt


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line three cookie sheets with parchment paper.

  2. Use a wooden spoon to mix the flour, sugar, eggs, milk, vanilla, butter, lemon zest, and salt in a large bowl to make a smooth dough.

  3. Break off balls of dough the size of walnuts and form into 4-inch (10-cm) ropes.

  4. Form the ropes into 1 1/2-inch (4-cm) rings and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  5. Bake, one sheet at a time, for 15-20 minutes, or until just golden. Cool the cookies completely on the cookie sheets.
