Fresh Fruits Recipes - Healthy Banana Cookies Recipe

Ingredients

  • 1/3 cup/30 g sunflower seeds

  • 1/3 cup/50 g old-fashioned rolled oats

  • 1/3 cup/50 g all purpose/plain flour

  • 2 tbsp honey

  • 1 tbsp sunflower oil

  • 1 large egg, lightly beaten

  • 1 large ripe banana, mashed

  • 1 tbsp sunflower seeds, to decorate


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a cookie sheet.

  2. Finely grind the sunflower seed and oats with a pestle and mortar or in a blender until they resemble flour.

  3. Heat the honey and oil in a small saucepan over low heat. Mix the honey mixture with the sunflower seed  mixture in a medium bowl.

  4. Add the egg, beating until just blended. Stir in the banana. Drop teaspoons of the mixture 1 inch (2.5 cm) apart onto the prepared cookie sheet.

  5. Bake for 12-15 minutes, or until golden brown. Cool the cookies completely on the cookie sheets. Sprinkle with the remaining sunflower seeds.
