Ingredients

Method:

Beat the butter
and sugar in a large bowl until creamy. Add the
egg yolk and orange zest. Mix in the flour to form
a stiff dough. Refrigerate for 30 minutes.

Preheat
the oven to 350°F/180°C/gas 4. Butter and flour a
cookie sheet. Roll out the dough to a thickness of
1/8 inch (3 mm).

Use a fluted cutter to stamp out
small rounds. Continue cutting out cookies until all
the dough is used. Use a spatula to transfer the
cookies to the prepared cookie sheet.

Bake for
8-10 minutes, or until golden around the edges.
Cool the cookies on the sheet for 5 minutes.
Transfer to racks to cool.

Glaze: Mix the
confectioners' sugar with enough orange juice to
make a pour able consistency. Drizzle the glaze in
a decorative zigzag over the cookies.
