Fresh Fruits Recipes - Fruit Squares Recipe

Ingredients

  • 2 2/3 cups/400 g all purpose/plain flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup/50 g finely chopped dried apples

  • 3/4 cup/180 g butter, cut up

  • 1/3 cup/10 g granulated sugar

  • 2 tbsp vanilla sugar

  • 6 tbsp light corn syrup/golden syrup

  • 1 tbsp orange flower water or orange juice

  • 1 large egg 

Orange Glaze:

  • 1 cup/150 g confectioners'/icing sugar

  • 1-2 tbsp orange juice

  • 1 tbsp warm water

  • Grated zest of 1 orange


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter an 11 x 7-inch (28 x 18-cm) baking pan. Sift the flour, baking powder, and salt into a medium bowl.

  2. Process the apples, butler, granulated and vanilla sugars, corn syrup, and orange-flower water in a food processor until pureed.

  3. Add the egg, processing until just blended. Mix in the dry ingredients. Firmly press the mixture into the baking pan to form a smooth, even layer.

  4. Bake for 15-20 minutes, or until firm to the touch. Cool completely in the pan.

  5. Orange Glaze: Mix the confectioners' sugar with enough orange juice and water to form a runny glaze.

  6. Drizzle over the cake and sprinkle with the orange zest. Cut into bars.
