Fresh Fruits Recipes - Frosted Pineapple Bites Recipe

Ingredients

  • 2 cups/300 g all purpose/plain flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/125 g vegetable shortening

  • 1 cup/200 g firmly packed light brown sugar

  • 1 large egg

  • 1/2 tsp vanilla extract/essence

  • 1 can (8 oz/250 g) crushed pineapple, drained (reserve the juice 

PINEAPPLE GLAZE:

  • 3 cups/450 g confectioners'/icing sugar

  • 4 tbsp pineapple juice


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter three cookie sheets.  Sift the flour, baking powder, and salt into a medium bowl.

  2. Beat the shortening and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg and vanilla, beating until just  blended. Mix in the pineapple, reserving a few pieces for decoration, and the dry ingredients.

  4. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 8-10 minutes, or until just golden at the edges. Transfer to racks to cool.

  6. Pineapple Glaze: Mix the confectioners' sugar and pineapple juice in a small bowl.

  7. Spread the glaze over the tops of the cookies and top with the reserved pineapple. Let set for 30 minutes.
