Ingredients

2 cups/300 g
all
purpose/plain flour

tsp baking powder

1/2 cup/125 g vegetable shortening

cup/200 g firmly packed
light brown sugar

1 large egg

1/2 tsp
vanilla
extract/essence

1 can (8
oz/250 g) crushed pineapple, drained (reserve
the juice
PINEAPPLE
GLAZE:
Method:

Preheat the oven
to 400°F/200°C/gas 6. Butter three cookie sheets.
Sift the flour, baking powder, and salt into a
medium bowl.

Beat the shortening and brown sugar in
a large bowl with an electric mixer at high speed
until creamy.

Add the egg and vanilla, beating
until just blended. Mix in the pineapple,
reserving a few pieces for decoration, and the dry
ingredients.

Drop teaspoons of the dough 2 inches (5
cm) apart onto the prepared cookie sheets.

Bake,
one sheet at a time, for 8-10 minutes, or until just
golden at the edges. Transfer to racks to cool.

Pineapple Glaze: Mix the confectioners' sugar and
pineapple juice in a small bowl.

Spread the glaze
over the tops of the cookies and top with the
reserved pineapple. Let set for 30 minutes.
