Ingredients

  • 2 cups/300 g all purpose/plain flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g granulated sugar

  • 1/4 cup/50 g firmly packed dark brown sugar

  • 1 large egg

  • 1 cup/250 ml applesauce

  • 1 tart apple, such as Granny Smith, pooled, cored, and finely chopped

  • 1 cup/l00 g finely chopped walnuts


Method:

  1. Preheat the oven to 375°F/170°C/gas 3. Butter three cookie sheets.

  2. Sift the flour, baking powder, baking soda, cinnamon, and salt into a medium bowl.

  3. Beat the butter and granulated and brown sugars in a large bowl with an electric mixer at high speed until creamy.

  4. Add the egg and applesauce, beating until just blended. Mix in the dry ingredients, apple, and walnuts.

  5. Drop tablespoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  6. Bake, one sheet at a time, for 15-20 minutes, or until just golden at the edges. Transfer to racks to cool.
