Ingredients

2 cups/300 g
all
purpose/plain flour

baking powder

tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup/125 g butter,
softened

1/2 cup/100
g granulated
sugar

1/4 cup/50
g firmly packed
dark brown sugar

large egg

1 cup/250 ml
applesauce

1 tart
apple, such as
Granny Smith,
pooled, cored, and finely chopped

1 cup/l00 g
finely chopped walnuts
Method:
-
Preheat the oven
to 375°F/170°C/gas 3. Butter three cookie sheets.

Sift the flour, baking powder, baking soda,
cinnamon, and salt into a medium bowl.
-
Beat the
butter and granulated and brown sugars in a large
bowl with an electric mixer at high speed until
creamy.
-
Add the egg and applesauce, beating until
just blended. Mix in the dry ingredients, apple,
and walnuts.

Drop tablespoons of the dough 2
inches (5 cm) apart onto the prepared cookie sheets.
-
Bake, one sheet at a time, for 15-20 minutes, or
until just golden at the edges. Transfer to racks
to cool.
