Cookie Recipes - Zesty Coconut Cookies
Ingredients
2 1/4
cups/330 g all-purpose/plain flour
1/2 tsp salt
1 cup/250
g butter, softened
1 cup/200
g granulated sugar
2 large eggs, lightly beaten
Grated
zest of 1 lime
1 tbsp
fresh lime juice
1/2 tsp
vanilla extract/essence
1/2 tsp
almond extract/essence
1 cup/125
g shredded/desiccated coconut
Method:
Sift
the flour and salt into a medium bowl. Beat the
butter and sugar in a large bowl with an electric
mixer at high speed until creamy.
Add the eggs,
beating until just blended. Add the lime zest,
lime juice, and vanilla and almond extracts.
Mix
in the dry ingredients and 3/4 cup (90 g) coconut to
form a stiff dough. Divide the dough in half.
Form
the dough into two logs 2 inches (5 cm) in diameter,
wrap each in plastic wrap, and flatten slightly to
form oblongs. Refrigerate for at least 30 minutes.
Preheat the oven to 375°F/190°C/gas 5. Butter
three cookie sheets. Discard the plastic wrap.
Slice the dough 1/4 inch (5 mm) thick and place 1
inch (2.5 cm) apart on the prepared cookie sheets. Sprinkle with the remaining coconut.
Bake, one
sheet at a time, for 10-12 minutes, or until just
golden. Transfer to racks and let cool completely.
