Preheat the oven
to 400°F/200°C/gas 6. Butter two cookie sheets.
Sift the flour,
baking powder, and slat into a medium bowl. Beat the
butter and sugar in a large bowl with an electric
mixer at high speed until creamy.
Add the egg,
beating until just blended. Mix in the dry
ingredients and coconut until well blended.
Drop tablespoons
of the dough 2 inches (5 cm) apart onto the prepared
cookie sheets, pressing down lightly with a fork.
Bake for 10-15
minutes, or until golden brown. Cool on the cookies
sheets for 15 minutes. Transfer to racks to cool.
