Dried Fruit Cookie Recipes - Raw Sugar Raisin Cookies

Ingredients

  • 1 cup/180 g golden raisins/ sultanas

  • 2 cups/300 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/8 tsp freshly grated nutmeg

  • 1/8 tsp salt

  • 4 tbsp milk

  • 1/8 tsp fresh lemon juice

  • 1/2 cup/125 g butter, softened

  • 1 cup/200 g raw sugar (Demerara or Barbados)

  • 1/4 cup/50 g granulated sugar

  • 2 large eggs


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets.

  2. Plump the raisins in hot water to cover in a small bowl for 10 minutes. Drain well and pat dry with paper towels.

  3. Sift the flour, baking powder, cinnamon, nutmeg, and salt into a medium bowl. Mix the milk and lemon juice in a small bowl.

  4. Beat the butter and raw and granulated sugars in a large bowl with an electric mixer at high speed until creamy.

  5. Add the eggs, beating until just blended. Mix in the dry ingredients, milk mixture, and raisins.

  6. Drop teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

  7. Bake for 12-15 minutes, or until just golden. Transfer to racks to cool.
