Dried Fruit Cookie Recipes - Pecan Delight Cookies

Ingredients

• 1 3/4 cups/175 g finely chopped pitted dates

• 1 3/4 cups/175 g finely chopped pecans

• 2 large egg whites

• 1 cup/150 g confectioners'/icing sugar

• 1 tbsp unsweetened cocoa powder

• juice of 1 lemon

Method:

1. Preheat the oven to 325°F/170°C/gas 3. Butter two cookie sheets. Chop the dates very finely and place in a large bowl.

2. Add the pecans. Stir in the egg whites, confectioners' sugar, cocoa, and lemon juice and mix until well blended.

3. Drop teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

4. Bake for 25-30 minutes, or until just golden at the edges. Transfer to racks to cool.
