Dried Fruit Cookie Recipes - Nutty Elevenses

Ingredients

  • 3 1/4 cups/480 g all-purpose/plain flour

  • 1/2 tsp ground cinnamon

  • 1/8 tsp salt

  • 1 cup/250 g butter, softened

  • 1 1/2 cups/300 g firmly packed light brown sugar

  • 3 large eggs

  • 1 tsp baking soda dissolved in 1 1/2 tbsp hot water

  • 1 cup/100 g coarsely chopped walnuts

  • 1 cup/180 g raisins


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter four cookie sheets. Sift the flour, cinnamon, and salt into a large bowl.

  2. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the eggs, beating until just blended. Stir in the baking soda mixture. Mix in the dry ingredients, walnuts, and raisins.

  4. Drop tablespoons of the dough 3 inches (8 cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 8-10 minutes, or until just golden at the edges. Transfer to racks and let cool.
