Manhattan Fortune
Cookies
Ingredients
2 large
egg whites
1/3 cup/70 g granulated sugar
1/3 cup/50
g all-purpose/plain flour
2 tbsp
butter, melted
1 tsp
coconut extract/essence
1/8 tsp salt
2 tbsp
shredded/desiccated coconut
Method:
Preheat
the oven to
350°F/180°C/gas 4. Butter
four cookie sheets. Beat the egg whites and sugar
in a large bowl with an electric mixer at high speed
until frothy.
With mixer at low speed, beat in the
flour, butter, coconut extract, and salt. Use a
large rubber spatula to fold in the melted butter,
flour and salt.
Drop teaspoons of the batter onto
the prepared cookie sheets, spreading it out to
3-inch (8-cm) circles. Sprinkle with the coconut.
Bake, one sheet at a time, for 5-7 minutes, or
until lightly browned. Use a spatula to remove the
cookies, placing a message in the center.
Fold the
cookies in half, enclosing the message to form a
semicircle. Hold the rounded edges of the semicircle
between your thumb and index finger.
Place your
other index finger at the center of the folded edge
and push in. Let cool completely.
