Cookie Recipes - Ginger Cherry Squares
Ingredients

1 cup/150 g
all-purpose/plain flour

1 tsp
baking powder

1/8 tsp salt

1 cup/100 g finely
chopped mixed dried fruit

1/2 cup/50
g finely chopped crystallized ginger

1/2
cup/125 g butter, softened

cup/150 g granulated sugar

egg
Method:

Preheat
the oven to 300°F/150°C/gas 2. Butter an 11 x
7-inch (28 x 18-cm) baking pan.

Sift the flour,
baking powder, and salt into a medium bowl. Stir
in the dried fruit and ginger.

Beat the butter and
sugar in a large bowl with an electric mixer at high
speed until creamy. Add the egg.

Mix in the dry
ingredients. Spoon the mixture into the prepared
pan.

Bake for
40-45
minutes, or
until golden brown. Cool completely before cutting
into bars.
