Dried Fruit Cookie Recipes - Ginger Cherry Squares

Ingredients

  • 1 cup/150 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1 cup/100 g finely chopped mixed dried fruit

  • 1/2 cup/50 g finely chopped crystallized ginger

  • 1/2 cup/125 g butter, softened

  • 3/4 cup/150 g granulated sugar

  • 1 large egg


Method:

  1. Preheat the oven to 300°F/150°C/gas 2. Butter an 11 x 7-inch (28 x 18-cm) baking pan.

  2. Sift the flour, baking powder, and salt into a medium bowl. Stir in the dried fruit and ginger.

  3. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Add the egg.

  4. Mix in the dry ingredients. Spoon the mixture into the prepared pan.

  5. Bake for 40-45 minutes, or until golden brown. Cool completely before cutting into bars.
