Cookie Recipes - Fruity Raisin Moments
Ingredients

2 cups/300 g
all-purpose/plain flour

1 tsp baking powder
-
1/4 tsp freshly grated
nutmeg

1/8 tsp salt
-
1/2 cup/125 g butter, cut
up

1/2 cup/100 g firmly packed
light brown sugar

2/3 cup/70 g finely chopped
candied peel
-
1/3 cup/45 g raisins
-
1 large egg, lightly beaten
Method:

Preheat the oven
to 400°F/200°C/gas 6. Butter two cookie sheets.

Sift the flour,
baking powder, nutmeg and salt into a large bowl.
Use a pastry blender to cut in the butter until the
mixture resembles coarse crumbs.

Stir in the brown
sugar, candied peel, raisins and egg. Drop
tablespoons of the dough 2 inches (5cm) apart onto
the prepared cookie sheets.

Bake for 20-25
minutes, or until golden brown. Transfer the cookies
to racks to cool.
