Cookie Recipes - Dried Fruit Squares
Ingredients

1 1/2 cups/225g whole-wheat
flour
-
1 1/2 tsp baking powder

1/4 tsp salt
-
3 large firm-ripe pears,
peeled, cored and finely chopped
-
1 1/2 cups/150g finely
chopped dried apricots
-
2 tbsp honey
-
1 tbsp apples sauce
-
2 tbsp vegetable oil
-
2 large eggs, lightly
beaten
-
1/2 cup/50g flaked almonds,
to decorate
Method:
-
Preheat the oven
375°F/190°C/gas 5. Line an 8 inch (20cm) baking pan
with aluminum foil, letting the edges overhang.

Sift the flour,
baking powder and salt into a medium bowl. Mix the
pears, apricots, honey and applesauce in a large
bowl.

Beat in the oil
and eggs until well blended. Mix in the dry
ingredients. Pour the mixture into the preheat pan.

Sprinkle with the
almonds. Bake for 25-30 minutes, or until just
golden and a toothpick inserted into the center
comes out clean.

Using the foil as
handles, lift onto a rack to cool. Cut into bars.
