Dried Fruit Cookie Recipes - Dried Fruit Squares

Ingredients

  • 1 1/2 cups/225g whole-wheat flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3 large firm-ripe pears, peeled, cored and finely chopped

  • 1 1/2 cups/150g finely chopped dried apricots

  • 2 tbsp honey

  • 1 tbsp apples sauce

  • 2 tbsp vegetable oil

  • 2 large eggs, lightly beaten

  • 1/2 cup/50g flaked almonds, to decorate


Method:

  1. Preheat the oven 375°F/190°C/gas 5. Line an 8 inch (20cm) baking pan with aluminum foil, letting the edges overhang.

  2. Sift the flour, baking powder and salt into a medium bowl. Mix the pears, apricots, honey and applesauce in a large bowl.

  3. Beat in the oil and eggs until well blended. Mix in the dry ingredients. Pour the mixture into the preheat pan.

  4. Sprinkle with the almonds. Bake for 25-30 minutes, or until just golden and a toothpick inserted into the center comes out clean.

  5. Using the foil as handles, lift onto a rack to cool. Cut into bars.
