Dried Fruit Cookie Recipes - Dried Apricot and Chocolate Salami

Ingredients

  • 2/3 cup/80 g graham cracker crumbs/crushed digestive biscuits

  • 1/2 cup/50 g coarsely chopped toasted almonds

  • 1/2 cup/50 g finely chopped dried apricots

  • 1/2 cp/50 g coarsely chopped candied cherries

  • 1/3 cup/70 g white chocolate chips

  • 5 oz/150 g semisweet/dark chocolates, coarsely chopped

  • 4 tbsp butter, cut up

  • 2 oz/60 g white chocolate, coarsely chopped


Method:

  1. Sift together the graham cracker crumbs, almonds, apricots, candied cherries, and chocolate chips in a large bowl.

  2. Melt the semisweet chocolate with the butter in a double boiler over barely simmering water. Remove from the heat and let cool for 5 minutes.

  3. pour the chocolate mixture over the graham cracker mixture and mix well. Turn the mixture onto a sheet of plastic wrap and form into a 10inch (25cm) log.

  4. Wrap in the plastic warp and refrigerate for 12 hours. Slice the log 1/2 inch (1cm) thick.

  5. Melt the white chocolate in a double boiler over barely simmering water and drizzle over the tops of the cookies.
