Dried Fruit Cookie Recipes - Date and Chocolate Chewies

Ingredients

  • 1/2 cup/125 g butter, cut up

  • 1/2 cup/100 g granulated sugar

  • 1 3/4 cups/175 g finely chopped pitted dates

  • 2/3 cup/70 g finely chopped candid cherries

  • 1/3 cup/60 g golden raisins/sultanas

  • 2 cups/200 g rice krispies

  • 8 oz/250 g semisweet/dark chocolate, coarsely chopped


Method:

  1. Set out a 10 1/2 x 15 1/2inch (26 x 36cm) jellyroll pan. Melt the butter and sugar in a large saucepan over medium heat.

  2. Remove from the heat and stir in the dates, cherries, raisins, and rice krispies until well coated.

  3. Spoon the mixture evenly into the pan, pressing down firmly. Refrigerate for 2 hours, or until set.

  4. Melt the chocolate in a double boiler over barely simmering water.

  5. Pour the chocolate over and let stand for 20 minutes until set. Use a sharp knife to cut into squares.
