Dried Fruit Cookie Recipes - Currant Oat Squares

Ingredients

  • 1 cup/250 g butter

  • 3/4 cup/180 g light corn syrup/golden syrup

  • 1/2 cup/100 g firmly packed light brown sugar

  • 1 cup/150 g old-fashioned rolled oats

  • 2/3 cup/100 g all-purpose/plain flour

  • 1/8 tsp salt

  • 1/2 cup/90 g currants

  • 3 oz/90 g white chocolate, coarsely chopped


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter a 9-inch (23-cm) square baking pan.

  2. Melt the butter with the corn syrup and brown sugar in a small saucepan until smooth.

  3. Stir together the oats, flour, salt, and currants in a large bowl. Stir in the butter mixture until well blended.

  4. Spoon the mixture into the prepared pan, pressing down firmly. Bake for 25-30 minutes, or until lightly browned. Cool completely in the pan.

  5. Melt the white chocolate in a double boiler over barely simmering water. Use a thin metal spatula to spread the chocolate over and cut into squares.
