Dried Fruit Cookie Recipes - Coconut Squares with Candied Cherries

Ingredients

  • 10 oz/300 g semisweet/dark chocolate, coarsely chopped

  • 1/2 cup/125 g butter, softened

  • 1 1/4 cups/250 g granulated sugar

  • 2 large eggs

  • 2/3 cup/70 g candied cherries, coarsely chopped

  • 2 cups/250 g shredded/desiccated coconut


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Line a 10 1/2 x 15 1/2-inch (26 x 36-cm) jelly-roll pan with aluminum foil.

  2. Melt the chocolate in a double boiler over barely simmering water. Spread the chocolate over the foil and set aside to cool.

  3. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  4. Add the eggs, beating until just blended after each addition. Use a large rubber spatula to fold in the cherries and coconut. Spread over the cooled chocolate.

  5. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before cutting into squares.
