Coconut Squares
with Candied Cherries
Ingredients

10 oz/300
g semisweet/dark chocolate, coarsely chopped
-
1/2 cup/125 g butter, softened
-
1 1/4 cups/250 g granulated sugar

2 large eggs
-
2/3 cup/70 g candied cherries, coarsely chopped
-
2 cups/250 g shredded/desiccated coconut
Method:

Preheat
the oven to 325°F/170°C/gas 3. Line
a
10 1/2 x 15 1/2-inch
(26 x 36-cm) jelly-roll pan with aluminum foil.

Melt the chocolate in a double boiler over barely
simmering water. Spread the chocolate over the foil
and set aside to cool.

Beat the
butter and sugar in a large bowl with an electric
mixer at high speed until creamy.

Add the eggs,
beating until just blended after each addition.
Use a large rubber spatula to fold in the cherries
and coconut. Spread over
the cooled chocolate.

Bake for
15-20 minutes, or
until a toothpick inserted into the center comes out
clean. Cool
completely before cutting into squares.
