Coconut Kisses
with Chocolate Cream
Ingredients

1 1/3
cups/200 g all-purpose/plain flour

1 tsp
baking powder
-
1/8
tsp salt

3/4 cup/180 g butter, softened

1/3 cup/70
g granulated sugar
-
1/2 tsp
vanilla extract/essence
-
1 large egg
-
3 tbsp
shredded/desiccated coconut
CHOCOLATE
FILLING:
Method:

Preheat
the oven to 300°F/150°C/gas 2. Set out two cookie
sheets. Sift the flour, baking powder, and salt
into a medium bowl.

Beat the butter, sugar, and
vanilla in a large bowl with an electric mixer at
medium speed until creamy. Add the egg, beating
until just blended.

Mix in the dry
ingredients. Place the coconut in a small
bowl. Roll teaspoons of the dough in the coconut
and place 1 inch (2.5 cm) apart on the cookie
sheets.

Bake for 18-20 minutes, or until lightly
browned. Transfer to racks to cool.

Chocolate
Filling: Beat the confectioners' sugar and melted
butter in a small bowl.

Mix in the cocoa powder. Stick the cookies together in pairs with the
chocolate filling.
