Dried Fruit Cookie Recipes - Coconut Cookies

Ingredients

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 2 tsp baking soda

  • 1/4 tsp salt

  • 2/3 cup/40 g shredded/ desiccated coconut

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g firmly packed light brown sugar

  • 1 tsp vanilla extract/essence

  • 1 large egg

  • 3 tbsp raspberry or strawberry preserves


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Set out two cookie sheets.

  2. Sift the flour, baking soda, and salt into a medium bowl. Stir in the coconut.

  3. Beat the butter, brown sugar, and vanilla in a large bowl with an electric mixer at high speed until creamy.

  4. Add the egg, beating until just blended. With mixer at low speed, gradually add the dry ingredients.

  5. Form the dough into balls the size of walnuts and place 1 inch (2.5 cm) apart on the sheets.

  6. Use your thumb to make a slight hollow in each center and fill with a small amount of preserves.

  7. Bake for 12-15 minutes, or until golden brown. Transfer to racks to cool.
