Dried Fruit Cookie Recipes - Cinnamon and Raisin Cookies

Ingredients

  • 2 1/3 cups/350 g all-purpose/plain flour

  • 2 tsp ground cinnamon

  • 1 tsp baking powder

  • 1 tsp ground cloves

  • 1/2 tsp freshly grated nutmeg

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, softened

  • 3/4 cup/150 g firmly packed dark brown sugar

  • 2 large eggs

  • 1/2 cup/90 g raisins

  • 1/2 cup/50 g flaked almonds


Method:

  1. Sift the flour, cinnamon, baking powder, cloves, nutmeg, and salt into a medium bowl.

  2. Beat the butter, brown sugar, and eggs in a large bowl with an electric mixer at medium speed until well combined.

  3. Mix in the dry ingredients, followed by the raisins and almonds. Cover with plastic wrap and refrigerate for 30 minutes.

  4. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

  5. Drop heaped teaspoons of the cookie dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  6. Bake for 8-10 minutes, or until golden brown. Transfer to racks and let cool.
