Dried Fruit Cookie Recipes - Chewy Rolled Oat Cookies

Ingredients

  • 1 cup/150g all-purpose/plain flour

  • 1/4 tsp salt

  • 1/2 cup/125g butter, softened

  • 1/2 cup/100g firmly packed dark brown sugar

  • 2 1/2 cups/375g old-fashioned rolled oats

  • 1/2 cup/125ml store-bough cranberry sauce

  • 1/2 cup/50g coarsely chopped walnuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line an 8 inch (20cm) baking pan with aluminum foil, letting the edges overhang.

  2. Sift the flour and salt into a medium bowl. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Mix the dry ingredients and oats. Firmly pres two-thirds of the mixture into the prepared pan to form a smooth, even layer.

  4. Mix the cranberry sauce and walnuts in a small bowl and spread over the base. Spoon the remaining oat mixture over the tops, pressing down gently.

  5. Bake for 15-20 minutes, or until lightly browned. Cool completely in the pan. Using the foil as handles, lift onto the cutting board.

  6. Peel off the foil, cut into squares.
