Dried Fruit Cookie Recipes - Candied Fruit Delights

Ingredients

  • 1 1/2 cups/225 g all-purpose/plain flour

  • 1/8 tsp salt

  • 3 large eggs, separated

  • 1 cup/200 g granulated sugar

  • 1/2 cup/50 g very finely chopped mixed candied peel

  • 2 tbsp confectioners'/icing sugar, to sprinkle


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line three cookie sheets with parchment paper.

  2. Sift the flour and salt into a medium bowl. Beat the egg whites in a large bowl with an electric mixer at medium speed until frothy.

  3. With mixer at high speed, gradually add the granulated sugar, beating until stiff, glossy peaks form.

  4. Use a large rubber spatula to fold in the candied peel and dry ingredients. With mixer at high speed, beat the egg yolks in a small bowl until frothy.

  5. Fold the beaten egg yolks into the batter. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets. Sprinkle with confectioners' sugar.

  6. Bake, one batch at a time, for 10-12 minutes, or until pale gold. Cool on the sheets until the cookies firm slightly. Transfer to racks to finish cooling.
