Dried Fruit Cookie Recipes - British Cookies

Ingredients

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 1/4 tsp baking soda

  • 1/8 tsp salt

  • 6 tbsp butter, softened

  • 1/4 cup/50 g granulated sugar

  • 1/4 cup/50 g firmly packed light brown sugar

  • 1 large egg

  • 3/4 cup/180 ml mincemeat

  • 2 tsp brandy


Method:

  1. Preheat the oven to 375°F/190°C/gas 5.  Butter three cookie sheets. Sift the flour, baking soda, and salt into a medium bowl.

  2. Beat the butter and granulated and brown sugars in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg, beating until just blended. Mix in the dry ingredients, mincemeat, and brandy.

  4. Drop heaped teaspoons of the dough 2 inches (5cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 10-12 minutes, or until golden brown. Transfer to racks to cool.
