American Cookies
Ingredients

1 cup/150 g
all-purpose/plain flour

1/4 tsp baking soda

1/8
tsp salt

2 tbsp
butter, softened

2 tbsp
vegetable shortening
-
1/4 cup/50
g granulated sugar
-
1/4 cup/50
g firmly packed light brown sugar
-
1/2 tsp
vanilla extract/essence
-
1 large egg
-
1/2 cup/50 g
coarsely chopped dried cranberries
-
1/4 cup/30
g finely chopped mixed candied peel
-
1/4 cup/30
g finely chopped pecans
Method:

Preheat
the oven to 375°F/190°C/gas 5. Line two cookie
sheets with parchment paper.

Sift the flour,
baking soda, and salt into a medium bowl. Beat the
butter, shortening, and granulated and brown sugars
in a large bowl with an electric mixer at high speed
until creamy.

Add the vanilla and egg, beating
until just blended. Mix in the dry ingredients,
cranberries, candied peel, and pecans.

Drop
tablespoons of the dough 1 1/2
inches (4 cm) apart onto the prepared cookie sheets.

Bake for 8-10
minutes, or until golden at the edges. Cool on
the sheets until the cookies firm slightly. Transfer to racks to finish cooling.
