Dried Fruit Cookie Recipes - Aladdin's Lamp Cookies

Ingredients

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 6 tbsp butter, softened

  • 1/3 cup/70 g firmly packed light brown sugar

  • 1 large egg, lightly beaten

  • 1 tsp almond extract/essence

  • Seeds of a cardamom pods, crushed

  • 1/2 cup/50 g finely chopped candied cherries

  • 1/2 cup/50 g finely chopped dried apricots

  • 1/2 cup/50 g finely chopped crystallized ginger


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, and salt into a medium bowl.

  2. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg, beating until just blended. Mix in the dry ingredients, almond extract, and crushed cardamom, followed by the cherries, apricots, and ginger.

  4. Drop rounded teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

  5. Bake for 20-25 minutes, or until lightly browned. Transfer to racks and let cool.
