Coffee and Cream Cookie Recipes - Glimmering Cookies

Ingredients

  • 1 cup/150 g all-purpose/plain flour

  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 2 tbsp butter, cut up

  • 3 tbsp granulated sugar

  • 5 tbsp sour cream

  • 2 large eggs


Method:

  1. Sift the flour, baking powder, and salt into a large bowl. Use a pastry blender to cut in the butter until the mixture resembles fine crumbs.

  2. Stir together the sugar, sour cream, and 1 egg. Stir into the dry ingredients to form a smooth dough.

  3. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Preheat the oven to 425°F/220°C/gas 7. Line two cookie sheets with parchment paper.

  5. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm). Use a 2-inch (5-cm) cookie cutter to cut out the cookies.

  6. Gather the dough scraps, re-roll, and continue cutting out until all the dough is used.

  7. Use a spatula to transfer the cookies to the cookie sheets, spacing them 2 inches (5 cm) apart. Prick all over with a fork.

  8. Beat the remaining egg and brush over the tops of the cookies. Bake for 10-15 minutes, or until golden brown. Transfer to racks to cool.
