Cookie Recipes - White Chocolate and Pecan Cookies

 

Ingredients

  • 1 1/3 cups/200 g all-purpose/plain flour

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 2/3 cup/140 g raw sugar (Demerara or Barbados)

  • 1 tsp vanilla extract/essence

  • 1 large egg

  • 4 oz/125 g white chocolate, coarsely chopped

  • 1/2 cup/50 g finely chopped pecans


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a cookie sheet.

  2. Sift the flour, baking soda, and salt into a medium bowl. Beat the butter and raw sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the vanilla and egg, beating until just blended. Mix in the dry ingredients, white chocolate, and pecans.

  4. Form the dough into balls the size of walnuts and place 2 inches (5 cm) apart on the prepared cookie sheet.

  5. Bake for 10-12 minutes, or until just golden. Cool on the sheet until the cookies firm slightly. Transfer to racks and let cool completely.
