Cookie Recipes - White Chocolate Chip Refrigerator Cookies

 

Ingredients

  • 1 2/3 cups/250 g all-purpose/plain flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, softened

  • 4 tbsp sunflower or peanut oil

  • 3/4 cup/150 g firmly packed light brown sugar

  • 1 large egg, lightly beaten

  • 1/2 tsp vanilla extract/essence

  • 1 cup/180 g white chocolate chips

  • 1 cup/100 g chopped walnuts


Method:

  1. Sift the flour, baking powder, and salt into a medium bowl. Beat the butter, oil, and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  2. Add the egg and vanilla, beating until just blended. Mix in the dry ingredients, chocolate chips, and walnuts.

  3. Form the dough into a 7inch (18-cm) log, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets. Slice the dough 1/4 inch (5-mm) thick and place 2 inches (5 cm) apart on the prepared cookie sheets.

  5. Bake for 8-10 minutes, or until just golden at the edges. Transfer to racks to cool.
